So good--healthy chocolate chip cookies


I don't have much of a sweet tooth, and often enough I pass up dessert, whether it is ice cream, brownies or cookies...but I find these irresistible.  It doesn't hurt that they are healthier than your average cookie.

Healthy Chocolate Chips
(makes 2 1/2 dozen, but we always double the recipe)

3/4 cup rolled oats, ground in the blender to a coarse meal
1 cup whole wheat flour
2 Tbsp milled flax seed
1/2 tsp baking soda
1/2 tsp salt
1/4 cup butter, softened
1/4 cup coconut oil
1/3 cup granulated sugar
1/3 cup brown sugar
1 egg
1 tsp vanilla
1 cup chocolate chips

Preheat the oven to 350 degrees.  Line cookie sheets with parchment paper or grease well.
Mix the ground oats with the flour, flax seed, baking soda and salt.
Beat butter until fluffy.  Add the coconut oil and sugars, the egg and the vanilla.  Beat until creamy.  Add the dry ingredients and mix well.  Stir in the chocolate chips.

Place heaping teaspoons 1" apart on the cookie sheets.  Bake for 13 minutes or until edges just begin to brown.  Cool for 2 minutes on baking sheets before transferring to a cooling rack.

Crunchy, sweet, chocolatey and wonderful!

  1. I'm going to bookmark this... we bake a lot of cookies around here. Not only do I enjoy baking, but Rachel really enjoys baking cookies.
