We make this at least twice a month at our house because it is easy and everyone likes it! Granted, Sebastian picks around the tomatoes and Gabriel picks around the olives, but all in all it is an astonishing success. And did I already say it's easy? It is actually just like my pasta salad, only omitting the shredded mozzarella and vinaigrette and adding sliced sweet Italian sausage.
Ingredients:
1 package of 5 sweet Italian sausages, cooked (grilled really is best here!) and sliced
1 box penne, cooked according to directions and drained
About 3 Tbsp olive oil
1/3 cup pesto, either homemade or from a jar
1 can (dry weight 6 oz.) medium black olives, sliced or halved
1 can, 14.5 oz., petite diced tomatoes
Parmesan cheese to taste
To assemble:
Toss the cooked pasta with the olive oil and the pesto, until the pasta is well-coated. Toss in the Italian sausage with whatever juices/fat escaped from them during the slicing. Add the olive and tomatoes and toss to distribute. Add Parmesan cheese to taste and mix.
Serve warm or at room temperature with garlic bread and a green salad.
I just stocked up on Italian sausage 'cause it was on sale and my husband and I have this same meal about 2-3 times a month (we replace the pesto with plain olive oil and maybe mushrooms and/or green peppers & onions). You can't go wrong with this meal!

ReplyDeleteI am just about to make this - with rice pasta and sans tomatoes - it looks so yummy. Yes I know it's late - but at least we will have a good post game dinner.
