So good with sweet butter and an assortment of jams and preserves!
1 3/4 cup all purpose flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1 Tbsp sugar
5 Tbsp. unsalted butter
2 eggs, slightly beaten
1/3 cup milk or cream
Sugar for sprinkling (coarse sugar is especially pretty)
Preheat oven to 425 degrees F. and grease a baking sheet.
In a large bowl, sift together the flour, baking powder, salt and sugar. with a pastry blender, cut in the butter until course crumbs form.
Reserve two Tbsp. beaten egg. In a small bowl, mix the remaining egg with the milk or cream and blend well. Add to the butter/flour mix and stir with a fork until a soft dough forms.
On a floured surface with a floured rolling pin, roll dough into a 15"x 3" rectangle. Cut into five 3" squares, then cut each square diagonally into two triangles.
Place 1" apart on a greased baking sheet. Brush with reserved egg and sprinkle with sugar.
Bake for 12-14 minutes.
