I have a lot to do today. I have about 4 cups-worth of leftover turkey breast. I want to make something quick tonight, using the turkey if possible. I don't have time to scour the 'net for recipes...anyone have a post-Thanksgiving favorite to recommend...?
Cream of Wild Rice Soup
ReplyDelete1 lg onion, chopped
1 lg carrot, shredded or chopped
1 lg celery rib, chopped
1/4 cup butter
1/2 cup all-purpose flour
8 cups chicken broth
2 cups cooked wild rice
2 cups cubed cooked chicken
1/4 tsp. salt
1/4 tsp pepper
1 cup evaporated milk
1/4 cup snipped chives
In lg saucepan, saute the onion, carrot, and celery in butter until tender. Stir in flour until blended. Gradually add broth. Stir in rice, chicken, salt and pepper.
Bring to a boil over medium high heat. Cook and stir for 2 min or until thickened. Stir in milk, cook 3-5 min longer. Garnish with chives.
It's one idea, anyway! :)
Wow--this may be it. I actually have everything but the evaporated milk (I do have milk and cream, however). I have a wild/long grain rice mix. And I baked bread yesterday, too...

ReplyDeleteMake some rice, add broccoli, cheese, turkey, and a white sauce (or cream of something soup).
ReplyDeleteMake turkey salad sandwiches for dinner.
Make turkey tacos (shred turkey, add cumin, onion, garlic powders and a little water, heat through.)
Or turkey burritos.
Or turkey pasta salad!
I ended up making a white sauce with the turkey, peas and mushrooms over rice. I thought it was pretty tasty for something that took almost no time. Danette, I'm saving that recipe!
